"Spiced Mutton liver, tomatoes, Jalapenos and garlic paste rolled in a Markouk Saj Bread"
If you are a fan of mutton liver, then you definitely ought to try this delicious sandwich. The credits for this recipe definitely goes to my husband who is a hard core foodie. One thing he loves doing while we trying different food from new restaurants is that he loves guessing the ingredients and he guess it so well that it comes out perfectly right. Unlike me who loves to hog and not going for investigation as to what are the ingredients included in it. This recipe was specifically inspired form the Instagram Page Sirali Kebab. They post wonderful videos of different types of Turkish kebabs which leave us drooling and also sulking about not able to turkey soon due to the current pandemic situation. Turkey was in our wish list to visit this year, not only for the beautiful places but mainly for the food.
So based on the videos he watched, he came up with this delicious Turkish liver sandwich recipe which is an instant hit at home. You got to try this recipe using the Markouk Saj bread, as it turns a bit crispy with the grilling. And if you don't have the saj bread, its totally fine. You can try it out in the normal qubz. It is the garlic paste and the thickened sauce that gives the special flavors to this sandwich.
Serves - 4
INGREDIENTS:
Markouk Saj Bread - 4
Mutton Liver - 500 g
Butter - 2 Tbsp
Olive Oil - 2 Tbsp
Paprika - 1 tsp
Sumac - 1/2 tsp + 1/2 tsp (for the onion)
Pepper Powder - 1/2 tsp
Fennel Powder - 3/4 tsp
Tomato - 1 (sliced)
Onion - 1 (sliced)
Parsley - a handful
Juice of 1/2 a lemon
Salt - 1 tsp + 1/4 tsp (for the onion)
Water - 1/2 cup
Garlic Paste - 1/2 cup
DIRECTIONS:
1. In a pan add butter and olive oil. Once the butter is melted add in the liver.
2. Once the liver is browned, add a tsp of salt.
3. Then add paprika, Sumac, pepper powder and fennel powder. Cook Until the water is almost evaporated. Don't make it too try.
4. Transfer the cooked liver into another plate.
5. Into the same pan add water and cook until the sauce thickens.
6. Transfer the thickened liver sauce into a bowl and keep aside.
7. In a bowl add onion, parsley, sumac, lemon juice and salt. Mix well using hands.
8. Take a Saj bread, spread some garlic paste and top with the cooked liver. Place the sumac mixed onions on top followed by jalapeno and tomato. Finally add some thickened liver sauce on top.
9. Roll the Saj bread and grill in an oil smeared pan untill bot the sides turn golden brown.
