I would like to start my First Post with Frittata which is adored at Home and can be made when you are totally confused what to make for Breakfast/Brunch/Dinner.
Frittata is an Italian dish which is basically a crust less Quiche filled with Chicken, Veggies and Cheese. The perfect Fritatta should be Creamy, Custardy and loaded with veggies and Cheese(My favorite Part). I usually make my Frittata with whatever I have on hand. I variate it with potatoes, Grated carrots, Capsicum, Mushrooms, Broccoli, Spinach etc. We can either bake the frittata or Cook on stovetop. I personally prefer cooking in an Iron Skillet.
This is a super simple and super easy recipe where you can cook the filling ingredients and the Frittata in the same Pan.
FRITTATA
INGREDIENTS
Eggs - 6
Heavy Cream - 1/2cup
Grated Mozzarella Cheese - 3/4 Cup
Onion - 1 (Medium)
Garlic - 2 cloves
Mushroom - 1/2 cup
Boneless Chicken - 1/2 cup (Cubed)
Capsicum - 1/2 cup (I used green and red)
Oregano - 1/2 tsp
Pepper powder - 1/2 tsp
Olive Oil - 2 Tbspn
Salt
DIRECTIONS
1. Whisk the eggs, cream, cheese, pepper and salt in a bowl and keep aside.
2. Heat Olive Oil in a pan and add in garlic, Saute for 30 sec.
3. Add in the onion and saute until its soft. Add in the chicken, cook for a couple of minutes until its cooked.
4. Add in the Mushroom and Saute well until its cooked.
5. Finally add in the Capsicum and oregano, a pinch of salt and pepper.
6. Make sure all the ingredients are evenly distributed across the pan and reduce the flame.
7. Pour in the egg mixture over the veggies. Sprinkle some cheese on top.
7. Cover with a lid and cook on a low flame for 8 - 10 min until the eggs are set and cooked on top.
