Mini Chicken Pot Pie

Pot Pie is made of Flaky Pie Crust and a Buttery Creamy Chicken and Veggie Filling, loaded with flavor.  


Chicken Pot Pie is an ultimate comfort food which can be made on your lazy days when you are looking to cook something easy. The filling can be prepared in advanced and you can freeze them and use them when needed for pot pies.


Mix in the veggies and the cream transfer into ramekins and cover the top with puff pastry is all that you have to do to make these easy, delicious mini pot pies. I prefer and also since its easy to use store bought puff pastries. Pot pies can be prepared with crust on top as well as crust at the bottom. Here I am preparing the pot pie with crust on top.



This was one of the first dish which was in my bucket-list to try out. When I prepared these first at home,it was an instant hit. The boys adored it and stills demands to make these once in a while. Here I have used Sunbullah Puff Pastry which is available at the frozen section of the supermarkets.





Recipe:


Ingredients:

Butter - 2 Tbsp

Shredded Chicken - 1/2 Cup

Mushroom - 1/2 Cup

Garlic - 2 cloves

Onion -1 (chopped)

Potato - 1/2 cup(diced)

Carrot - 1/2 cup(diced)

Green Peas(Frozen) - 1/3 Cup

Flour - 1 Tbsp mixed with 2 Tbsp water

Chicken Stock - 1 cup

Cream - 1/2 Cup

Oregano - 1/2 Tsp

Pepper Powder - 1/2 Tsp

Salt - As Required

Puff Pastry sheets - 4

Egg - 1


Method:


1. Heat butter and add in minced garlic and onion. Saute well untill tranluscent

2. Add in potato and carrot. Saute well for let cook for 2 min.

3. Add pepper powder, oregano and salt.

4. Add green peas, mushroom and shredded chicken and cook for 2 min.

5. Finally add the chicken stock, flour mixture and cream.

6. Simmer for 5min untill the sauce thickens.

7. Preheat the oven to 200 degrees.

8. Spoon the chicken mushroom filling upto 3/4th of the ramekin.

9. Shape the Puff pastry into a circle as the size of the ramekin (pls check the video)

10. Place the puff pastry sheets on top of the ramekin and set the edges using a fork.

11. Cut 2 slits on the top for the steam to escape.

12. Brush the top of the puff pastry with a beaten egg.

13. Bake the pot pies for 20 - 25 min untill the top turns golden brown.
