Kothuporotta

Kothuporotta is a South Indian Dish which can be eaten as a snack or meal any time of the day. Kothuporatta is one of the street foods of Kerala and Tamil Nadu. It is basically made from our Kerala's own Porotta and left over beef/chicken curry. Here I haven't used the left over gravy but cooked the beef separately in spices. But its much easier to make when you have the leftover gravy.



Usually I have seen the recipe of kothuporotta been made by adding spices into the sauteed onion, ginger, garlic, chilli, tomato which is then mixed with the left over beef curry and shredded porottas. Instead of the beef curry you can also use left over chicken curry provided the chicken is shredded.


If you do not have the left over gravy its totally fine, you can quickly cook the chicken or beef with the spices as I have done in my recipe. Addition of the chicken or meat stock gives delicious flavor to the dish. Also in my version I do add the sauces which gives an extra flavor and the addition of eggs gives extra richness to the dish.



An easy dish which can be prepared is very less time.



Recipe:

Ingredients:


Cook 450g beef in 1/4 tsp turmeric powder, 1/2 tsp chilli powder, 1/2 tsp coriander powder and salt.


Porotta - 5

Onion - 1 (diced)

Chilli - 2

Capsicum - 1 (diced)

Eggs - 3

Beef/Chicken - 1 cup

Beef/Chicken Stock - 3/4 Cup

Soya Sauce - 1 Tbsp

Ketchup - 3 Tbsp

Pepper Powder - 3/4 tsp

Salt - As Required

Capsicum - 1/2 (Sliced)(Optional)

Oil - 2 Tbsp


Method:

1. Cut the Porotta into small pieces as shown in video and keep aside.

2. Heat oil, Saute Onion untill translucent, add in the diced capsicum.

3. When the capsicum is half cooked and in the sliced chillies.

4. Scramble 3 eggs, salt and pepper into the sauteed onion and capsicum untill the eggs are well cooked.

5. Pour the beef stock and cook untill the stock in 80% evaporated.

6. Add in the soya sauce and ketchup. Mix well.

7. Add in cooked beef, once its well mixed with the onion, add in the cubed porotta.

8. If you like adding extra capsicum, do it at this stage.

9. Let cook for 5 min in low flame. Its ready and you can enjoy them while it hot.

10. Before having sprinkle chopped onion and coriander leaves which gives an extra crunchiness.


Note: If you have left over beef curry, you can replace 1 cup beef and 3/4 beef stock with 1 cup beef curry
