Crispy chicken strips soaked in buttermilk and double coated in flour and fried to golden brown are juicy, delicious and flavorful. Coating in flour twice gives the chicken extra crispiness.
This is an easy to make recipe where your kids will love and you too. I love recreating recipes. Being a chicken lover my elder son loves KFC. Each time when we have a confusion what to eat when we go out he has only one answer KFC. So I thought why not recreate it and we loved it. It was juicy, yummy, crispy and delicious.
Soaking the chicken strips in buttermilk along with the spices and marinating them for an hour will infuse more flavors to the chicken and makes it more juicy. These strips are best if you have it with special dip which I have given below. I tried this recipe by coating it only once in flour but it didn't turn that crispy. So the next time when I made it , I tried double coating the strips which gave it extra crispiness.
Ingredients:
Chicken Breasts - 2
Buttermilk - 3/4 cup
Hot Sauce - 1 Tbsp
Dried Parsley - 1 tsp
Paprika - 1 tsp
Garlic Powder - 1 tsp
Salt - 1 1/4 tsp
All Purpose Flour - 1 cup
Cornflour - 1/4 cup
Baking Powder - 1/2 tsp
Baking Soda - 1/2 tsp
Eggs - 2
Method:
1. Cut the chicken into strips and Soak them in buttermilk, hot sauce, dried parsley, paprika, garlic powder and 1 tsp salt.
2. Marinate for an hour.
3. Mix Flour, cornflour, baking powder and baking soda and keep aside.
4. Beat the eggs in 1/4 tsp salt.
5. Dip each piece of chicken in flour mixture then in egg and then back in flour mixture.
6. Repeat for all pieces.
7. Heat the oil and fry the chicken untill they turn golden brown.
8. For the dip, Mix 1 Tbsp Mayonnaise with 1 Tbsp Ketchup
