CREAMY OATS VEGETABLE SOUP

Rich, creamy and Nutritious Soup loaded with vegetables, oats and milk.


When it comes to Suhoor during Ramadan, I am out of ideas on what to make. I prefer more of simple and easy recipes which is healthy and nutritious. This is one such simple recipe which you would enjoy having it during suhoor or after your taraweeh prayers.


The addition of oats helps in thickening the soup, hence if the soup turns a bit thick after cooling, you can add in some water and heat it up to get the desired consistency.

Oats is something which we don't have much at home. When it comes to oats I am always out of recipes. Mostly it will be an oats bar or some oats cooked in milk which I don't prefer having much, though my hubster and my elder son enjoy having it.

This soup has finally come to a rescue for my easy and yummy recipe with oats at home.

I sometimes variate it by adding in some chicken or replace water with chicken stock.


For the past 2 to 3 years we mostly prefer non fried food for iftar. We try to have fried food only twice in a week. So I have been looking for non fried food ideas for Iftar and Suhoor. In Sha Allah I will be sharing soon.



 

INGREDIENTS:


Oats - 1/2 Cup Butter - 1 Tbsp

Garlic - 1 Tbsp

Carrot - 1/2 cup (diced)

Beans - 1/4 cup

Green Peas - 2 Tbsp

Cabbage - 1/3 cup

Water - 3.5 cups

Milk - 1/2 cup

Parsley - 2 handfuls (chopped)

Black Pepper - 1/2 tsp

Salt - 1 tsp


DIRECTIONS:


1. Add butter into a pan. Once it has melted, Add in garlic. Saute untill it releases its aroma.

2. Add in carrots, beans and peas. Saute for 2 min.

3. Add in the oats. Toss for a minute.

4. Throw in the cabbage and finally add in water, salt, black pepper and oregano.

5. Let the water start boiling and allow to cook for 3 to 4 minutes.

6. Finally add in the milk and Parsley. Simmer for 2 more minutes and switch of the flame.


Note: The soup may turn into a thick consistency once cooled. You can add in little bit of water and heat the soup for 2 to 3 minutes to get the desired consistency before having it.
