Quesadilla is a Mexican Dish which is a grilled tortilla with melted cheese, chicken and veggies. This is an easy recipe where you can throw in whatever veggies you have in your fridge. You can also variate it with mushrooms instead of chicken and make a vegetarian version too.
I made this recently for a story hop in Instagram similar to my previous post. The theme was a quick tea time snack, When suddenly the idea of Quesadillas came into my mind. I personally love quesadillas mainly because I have of my favorite things in it- cheese and then chicken (heheh). I usually make Quesadillas either as a breakfast or as for Iftar at home. This is a quick oil-free snack option for Iftar too.
CHICKEN QUESADILLA
INGREDIENTS
Boneless Chicken - 250g
Marinade
Paprika - 3/4 tsp
Garlic Powder - 1/2 tsp
Salt - 1/4 tsp
Chilli Powder - 1/4 tsp
Oregano - 1/4 tsp
Oil - 3 Tbsp
Tortilla - 4
Mozzarella Cheese
Red Capsicum - 1/2(sliced)
Green Capsicum - 1/2(sliced)
Onion
DIRECTIONS
Marinate the chicken with the ingredients mentioned in the Marinade.
Heat Oil in a pan. Add in the Chicken.
Once the chicken is cooked, add in the onion and capsicum.
Cook for 2 minutes and switch off the flame.
In a pan,drizzle some oil and place a tortilla.
Spread Mozzarella Cheese and the chicken filling.
Again spread Mozzarella Cheese on top of the chicken filling.
Place a tortilla on top and apply some oil on top.
Once the bottom turns lightly brown, flip the Quesadilla and let grill untill the bottom turns brown.
