Chicken Fajita Wrap

Fajita is a Mexican Cuisine in which Grilled chicken is cooked with Onions and Capsicum which is usually served on a Tortilla. This Chicken Fajita marinade is mouthwatering and easy to make on your busy days. This will be a good lunch box idea for your kids where you can make the filling one or two days ahead and pack them easily on the school days.


The Chicken Fajita wrap is a scrumptious dish and a feast for your eyes and palate.


This flavor packed and colorful filling is juicy and delicious with crispy capsicum strips. The Chicken is marinated with lemon and spices and cooked with Onion and capsicum and once cooled they are wrapped in the Tortillas. Instead of tortilla you can also use Chapatis made of all purpose flour or wheat for those who is looking for a healthier option.




The Fajita wrap was first prepared at home during Ramadan and was an instant hit. My husband for the past two years had asked me to reduce the fried snacks during Iftar time. He told me to make fried snacks only once or max twice in a week. Now I was in a dilemma as I had grown up eating only fried snacks during iftar time (no regrets hehe). My mom used to to prepare 2-3 fried snacks for Iftar and thats what we as kids love to eat during Iftar time (even now :P). Even I used to prepare fried snacks untill last 2 yrs but now have reduced to just once/twice a week. So I started searching for healthier options and came across this amazing recipe and now is made quite often at home. Reducing fried food during Ramadan creates a big difference in our energy levels and can give us extra time for our prayers and duas.



Lets move to the recipe.


Ingredients:

Chicken- 2 cubed Chicken breasts(around 400 g)

Lemon - 1

Sugar - 1/2 tsp

Cumin - 1 tsp

Paprika - 1.5 tsp

Salt - 1 tsp

Olive Oil - 4 tbsp

Oregano - 2 tsp

Onion - 1 (Big)

Garlic - 2 cloves

Capsicum - 3,cut into strips (red, green and yellow)


Method:


1. Marinate the Chicken with lemon, sugar, cumin, paprika, salt, oregano and 1 tbsp oil for an hour.

2. Slice the onions and Capsicum and mince the garlic. Keep it aside.

3. Heat 3 tbsp oil and add in garlic, saute for sometime.

4. Add in onion and cook until they are soft.

5. Now add in the marinated chicken and cook for sometime until the chicken is well cooked. See that the water from the chicken is fully evaporated else the filling will remain soggy.

6. Add in the capsicum and let cook for 5 minutes and switch off the flame. Do not overcook the capsicum as we need it to be crunchy.

7. Heat the tortilla on both sides and add in the cooled filling. Roll the tortilla as mentioned in the video. Also u can grill the rolled tortillas in some oil in a grill pan until u get golden brown grill marks are formed for crispy tortilla wraps.
