Chicken Chattipatiri

Chattipatiri is a cuisine made in the Malabar region of Kerala. It is made with layered pancakes with sweet and savory fillings. In some places they are also known as 'athishayapathil'. Its basically an Indian version of Lasagna cooked on stove top at a low flame. There are mainly 2 variations of chattipatiri, the sweet ones and the savory ones. The sweet chattipatiri is made of layered pancakes with sweetened eggs, nuts and raisins and in the savory ones we use chicken or beef fillings in between the pancakes. When I was a young I preferred sweet ones over savory but now I adore savory ones.



Instead of Pancakes, chappathis are also used but I personally prefer using pancakes as it makes this dish more soft. I have also seen some of my friends use fried puris instead of pancakes which gives an extra flavor and richness but I felt it a bit time consuming for me. So if you have enough time do try it out using fried puris(the size of the puri should be that of the pan that you are making the chattipatiri) instead of the pancakes and follow the rest of the recipe.



This dish was prepared mainly in the Northern region of Kerala and is something which was not prepared at my place. So when I was young we use to go to Calicut to have these chattipatiris. Just a trip to Calicut to have their delicacies. Basically a food tour(:P) to Calicut to have the sweet chattipatiris, Muttamala, Kallumakaya and the list goes on.


Nowadays mostly they are prepared at home or we can find them at various Malabar Food Joints. On days when I make this dish my foodie husband and kids gets extra happy. When I see the way they eat their favorite food full of enthusiasm makes my tummy full. I mostly make this dish on Ramadan as an option for a non fried food as I mentioned in my previous post.



Lets move to the recipe.


Ingredients:


For the Batter:

Maida - 1 Cup

Egg - 1

Water - Enough to make a thin batter(around 1.5 cup)

Salt - As Required


For the Filling:

Chicken - 300g(cooked in salt and 1/4 tsp pepper)

Onion - 2 (Medium)

Green Chillies - 3

Chopped Ginger - 1 Tbsp

Chopped Garlic - 1 Tbsp

Turmeric Powder - 1/4 tsp

Chilli Powder - 1/2 tsp

Coriander Powder - 1/2 tsp

Fennel Powder - 1/2 tsp

Garam Masala - 1/4 tsp

Chicken Stock - 1/4 cup

Salt - as required

Oil - 3 Tbsp


Egg Mixture:

Eggs - 6

Milk - 3 Tbsp

Chilli Powder - 1/4 tsp

Pepper - 1/4 tsp

Salt - As required

Coriander Leaves - handful (Chopped)


Ghee/Oil - 1 Tbsp


Method:

1. Mix all the ingredients for the Egg mixture and keep aside.

2. Shred the cooked chicken and mince them in a grinder and keep aside.

3. For the filling Heat oil and saute onion, green chilies, chopped ginger and garlic until they turn soft add in the chili powder, turmeric powder, coriander powder, garam masala and fennel powder, salt and saute well.

4. Add in the chicken stock and saute for some time.

5. Add in the minced chicken and coriander leaves. Let cook for 5 min in a low flame.

6. Mix the ingredients for the batter and start preparing the pancakes. Pour a ladle of batter into a non stick pan and prepare a thin dosa like batter. The size of the pancake should be almost equal to the size of the pan you are making the chattipatiri. Cook both sides and keep aside. Make the remaining pancakes. This batter can make upto 6 pancakes for the pan I am using.

7. For the assembly take a nonstick pan and spread ghee/oil.

8. Take a pancake and dip it in the egg mixture, then place it in the pan. Spread some chicken filling on top and pour a ladle of egg mixture.

9. Take the second pancake, dip it in the egg mixture,Spread the chicken filling on top and pour a ladle of egg mixture. Repeat the above steps for the rest of the pancakes untill the last pancake which is dipped in egg and assembled. Do not spread the filling on top of the last pancake.

10. Pour the rest of the egg mixture on top of the last pancake and close the pan with a lid. Let cook for 15-20 min in a low flame untill the sides of the chattipatiri turns golden brown.

11. Flip the chattipatiri into another nonstick pan smeared with oil and let cook untill it turns golden brown (around 5-8 min).

12. Place the chattipatiri into a serving plate and serve.
