Bun Kabab

Bun Kebab is a Pakistani Street food which consists of shallow fried patties, onions tomato, cabbage and chutney sandwiched in a bun. There are different kinds of patties used here such as the shammi kabab which is made with meat and also the patties made with potatoes or lentils,



Here I am going to introduce you with Bun Kabab using the Shammi kabab as the patty. Shammi kabab is made with boneless meat, lentils and spices cooked well and then are ground which are then shaped into patties and shallow fried.




The green chutney makes the bun kabab more flavorful and delicious. This green chutney can also be used a dip for various bhajis, cutlets or whateveryou like. its Super yummy. Here the kabab is dipped in egg and shallow fried or u can also keep a kabab wrapped in an omelette as well.



The original Bun kabab uses only the green chutney which is smeared on the both sides of the bun, but I prefer smearing mayonnaise on one side of the bun. I was introduced to these bun kababs by one of my neighbours. At first sight I felt it as a normal burger like any other homemade burger but when I had it, the flavors were exploding in my mouth. It was scrumptious.






Serves: 6


Ingredients:


Burger Buns - 6

Boneless Beef - 500g

Chana Dal - 1/2 cup

Water - 1/2 cup

Onion - 1 (chopped)

Ginger - 1 Tbsp (chopped)

Garlic - 1 Tbsp (chopped)

Black Cardamom - 1

Green Cardamom - 3

Cinnamon - 1 small piece

Whole Black Pepper - 8 to 10

Bay Leaf - 1

Red Chilli - 3 to 4 (you can increase as per your spiciness)

Salt - As Required

Egg - 1

Oil - As Required

Mayonnaise - As required

Ketchup - As required

Tomato - 1 (sliced)

Onion - 1 (sliced)

Cabbage - shredded


For the Green Chutney:


Mint leaves - 1/2 cup (Chopped)

Coriander Leaves - 1/2 cup (Chopped)

Green Chilly - 1

Tamarind - 1 small piece

Garlic - 1 small clove

Chat Masala Powder - 1/2 Tbsp

Sugar - 1/2 Tbsp

Salt - As required

Yogurt - 1/2 cup


Method:


1. Blend all the the ingredients under the green chutney into a smooth paste and keep aside.

2. In a Pressure Cooker mix boneless beef, chana dal, water, onion, ginger, garlic, black cardamom, green cardamom, cinnamon, black pepper, bay leaf, red chilly and salt well and cook until the beef is well cooked.

3. Once cooked, simmer until the water is fully evaporated.

4. Allow to cool and blend the beef-dal mixture to a smooth paste.

5. Make thick patties with the ground mixture. with the above ingredients you can make upto 6 patties.

6. Dip the patties in egg and shallow fry them and keep aside.

7. Heat the buns as shown in the video and apply some green chutney on one side of the bun, then place the shallow fried patties, then a piece of slice onion. Keep a piece of sliced tomato in top of it and then the shredded cabbage.

8. Pour more green chutney on top the cabbage and then the ketchup.

9. Cover with the other half of the bun which is smeared with mayonnaise.

Serve hot with the green chutney.
